2 sweet potatoes (yams) washed and diced
1 red bell pepper diced
1 red onion dices
1 tsp paprika
4 eggs
1 salmon filet diced
3 tbsp. Olive oil
salt and pepper to taste
3 green onions chopped
Directions: preheat oven to 375. Mix paprika, salt, and pepper together in a small bowl. Sprinkle over diced salmon, reserving half for potatoes. Heat a cast iron skillet to medium high and add 2 tbsp. of olive oil, once heated add salmon and cook until crisp, about 4-6 minutes. Remove from pan to a paper towel. Add remaining oil, potatoes, and sprinkle with the remaining seasoning. Sauté for 5 minutes. Then place pan in oven. Bake potatoes for 20 minutes or until for tender. Once tender, remove from oven and crack the eggs directly onto the potatoes. Place back in the oven for 3-5 minutes. Remove once eggs whites are done but yolk is still runny. Place crispy salmon on top, garnish with chopped green onions, and enjoy!
